What is bone marrow?
Bone marrow is a soft fatty substance found in the inner-most cavities of large bones. Marrow contains two types of stem cells: hemopoietic (which can produce blood cells) and stromal (which can produce fat, cartilage and bone).
Why should we eat it?
First and foremost, marrow bones are outrageously delicious. Their fatty composition provide an unadulterated experience of absolute decadence.
Second, bone marrow is SUPER healthy. Marrow is rich in nutrients, vitamins, minerals and fatty acids. Bone marrow is suggested to aid digestion, improve metabolism, reduce food allergies, promote brain function, strengthen the immune system, combat chronic fatigue and on and on and on.
And finally, bone marrow is inexpensive and unbelievably easy to cook. I found these canoe-cut bones at my local butcher shop (Jimmy P’s Butcher Shop). However, if you don’t happen to have access to a local butcher you shouldn’t have an issue finding marrow disks at your nearest grocery store.
Killer Keto Bone Marrow
Yield: 2 Bones // Serving size: 1
FAT: 23g // PROTEIN: 2g // CARB: 0g
- Bone marrow (canoe cut or disks)
- Bitter greens (garnish)
- 1 Tbsp olive oil
- Sea salt (I choose Hawaiian lava salt)
- Fresh cracked pepper
- Preheat the oven to 450 degrees.
- Place marrow (bone side down) on baking sheet.
- Bake for 20 minutes (until soft and gelatinous).
- Drizzle greens with olive oil and season with salt and pepper.
- Serve with bitter greens salad as accompaniment.
