Cottage Cheese with Balsamic Glaze

This is one of my top go-to recipes! Why? Because honestly, it takes less than 5 minutes to prepare, and for days that I’m short on time (which is most days) this recipe can be whipped up without hesitation.

Cottage Cheese with Balsamic Glaze

Yield: 1 giant bowl  //  Prep time: 5 min

Fat: 41g
Carbs: 21g
Protein: 20g
Sugar: 13g

Ingredients

  • 2 handfuls arugula
  • 5 cherry tomatoes, halved
  • 6 leaves fresh basil
  • 1/2 avocado, sliced
  • 1/2 cup Organic Valley 4% Cottage Cheese
  • 1 Tbsp balsamic vinegar or glaze of choice
  • 1 Tbsp extra virgin olive oil
  • Himalayan sea salt
  • Fresh cracked pepper

Instructions

  1. Lay down a bed of arugula.
  2. Place avocado, tomatoes, basil and cottage cheese in bowl.
  3. Drizzle with glaze and olive oil.
  4. Season with salt and pepper.
  5. Devour!
