Edamame Hummus


I LOVE chickpeas!  The problem is, they don’t love me back.  While experimenting in the kitchen, I discovered this delightful alternative!  Here’s How…

2 cups shelled, organic edamame beans
1/4 cup organic olive oil
3 tablespoons Traditional Dijon Mustard (I prefer Maile because it has some heat)
1 teaspoon Himalayan sea salt
1/2 lemon, freshly squeezed
1/2 cup water

Blend. Serve with fresh vegetables or sprouted tortilla chips. Enjoy!
