Food for Fuel

Eggs are my go-to when it comes to post-workout recovery fuel. They’re fast, healthy and extremely versatile. This speedy scramble is easily assembled in 15 minutes and promotes muscle recovery paired with prolonged satiety!

Here’s How:

First, sautĂ© a selection of vegetables in olive oil. I’ve chosen sweet onions and orange bell pepper. After browning the sautĂ©, I’ve added fresh baby spinach.

While the spinach is cooking (spinach cooks down in under a minute), beat eggs (2 should be sufficient for one bowl).

Add beaten eggs to the sauté mix and stir the scramble.

Finally, slice avocado and top with fresh salsa (I’ve chosen mango peach), Himalayan sea salt, lime and fresh cracked pepper.
